Pub Dog: Late Night Eats in Howard County

January 13, 2024

At the start of the year I asked you guys what you wanted to see more of, and a TON of you said late night eats, so here we are, Nomsters. Finding real food past midnight in Howard County is genuinely tough, most kitchens tap out by 10, so when I kept hearing good things about Pub Dog in Columbia, Deke and I had to go check it out for ourselves.

Short answer? It’s a yes from me. Pub Dog is a pizza and drafthouse tucked into Stanford Blvd that stays open till 2am daily with the kitchen going almost that late, and it turned out to be exactly the kind of laid-back, prices-won’t-break-the-bank spot you want at odd hours. The pizzas are super solid (my fave was the Bruschetta), the house craft beers are affordable, and the whole thing was just top-notch. If late night noms in HoCo are what you’re after, let me walk you through what we got.

What Makes Pub Dog a Standout Late-Night Spot

Here’s the thing that sets Pub Dog apart: it actually stays open when you need it. The Columbia location runs 11am to 2am every single day, with the kitchen going almost until close, which makes it one of the very few spots in HoCo where you can get a real pizza and a craft beer at 1 in the morning.

That alone earns it a spot in my late-night rotation. But it’s not just a “we’re open” situation, it’s a proper pizza and drafthouse. They brew their own beers, the pizza menu’s loaded with fun specialty pies, and the vibe’s relaxed enough that you can roll in casual after a movie or a late shift. Late night, affordable, and actually good food is a hard trio to pull off, and Pub Dog does it.

What to Order at Pub Dog

We came for pizza and beer, and that’s exactly what you should get here. The specialty pies are personal-sized thin crust, so it’s easy to split two between a couple people and try more of the menu, which is what Deke and I did. Here’s what we got and how it went.

Atomic Dog Pizza

There were a lot of really cool options, so we asked our server for his rec and he was SO excited about the Atomic Dog, extra crispy with a side of ranch and pesto, so that’s what we got for pie #1. It’s the spicy one, hot sauce and cherry peppers layered with smoky cheese and bacon, and that combo of heat and smoke was great!

The only drawback? Ours got a little burnt because we asked for it extra crispy, so that’s on us. Honestly, we still scarfed the whole thing down and loved it. My one real note is that it had a touch too much topping for me, so if you like a cleaner slice, maybe skip the “extra everything” energy on this one.

Bruschetta Pizza

This was my favorite of the two. The Bruschetta pie is a three-cheese base topped with chilled tomatoes, fresh basil, garlic, and shredded parm, simple yet oh-so-delicious. Between the two, I’d go with this one every time because it just felt more balanced, where the Atomic Dog was going full send on flavor. It’s the move if you want something fresh and a little lighter to go with your beers. Def a must-order!

The Drinks (and a Fun BOGO Surprise)

Onto drinks, because this is a drafthouse. Deke went for a lager and I opted for a yummy cider, which I loved, it tasted like candy in the best way! Deke wasn’t really into my cider but he was happy with his beer, so between us we were covered. The fun surprise was that the house drafts come as a buy-one-get-one, so when our server set down four drinks instead of two I was very confused, then very not-complaining, lol. Two craft beers for such an affordable price is a great deal, especially for house-brewed stuff. If you’re a beer person, this is a big part of the appeal.

A few more things on the menu we didn’t order but are worth knowing about (all still available per their current lineup): other specialty pies like the Baja Chihuahua and the Cajun Dog, a build-your-own option, wings, garlic sticks, and hot soft pretzels. They also run limited-time pizzas, like a Chicken Alfredo pie that was going when we visited.

Does Pub Dog Brew Their Own Beer?

Yep, and this is the part I didn’t fully realize at first. Pub Dog brews all its own beer at the Pub Dog Brewing Company facility over in Westminster, then pours it at the restaurants, so the taps here are basically all house. You’ll see options like Blond Dog, Maryland Lager, the Unleashed IPA, and the hard apple cider I got, plus their “Mixed Breed” blends that mash two house beers together.

Quick history note since I got this a little mixed up at the spot: Westminster is where the brewery lives, but the original Pub Dog actually opened back in 2001 down in Federal Hill in Baltimore, and the Columbia location came later. If a made-in-Maryland craft drink program is your thing, it’s easily one of the cooler ones in the county, right up there with J’s Brewery in Columbia, which brews traditional Korean makgeolli just down the road.

The Vibe and Experience

The vibe’s exactly what you want from a drafthouse: casual, unfussy, and easy to settle into for a couple hours. Service was a highlight for us, our server was really into the menu and steered us right on the Atomic Dog rec, which is always a good sign. It’s the kind of place that works for a lot of different nights, a low-key dinner, a late bite after something else, or a group that wants pizza and beers without a whole production.

There’s a leashed-dog-friendly patio if you’ve got a pup in tow, they run trivia on Monday nights, and it’s kid-friendly earlier in the evening before it leans more bar-and-late-crowd. However you roll in, our whole experience was top-notch.

Is Pub Dog Worth A Trip?

Yes, especially if you’re hunting for late-night food in HoCo. The pizzas are super solid, the house beers are a really good deal, and the prices won’t break the bank, so it lands as a reliable, low-key go-to rather than a special-occasion splurge. Get the Bruschetta, grab a couple drafts, and go easy on the extra-crispy request. If you want another Columbia spot for a slower night instead, Old Line Kitchen has seasonal plates and a cozy pet-friendly patio that’s more date-night than draft-house.

So that’s Pub Dog, my answer to all of you who asked for more late night eats. It delivers exactly what it’s supposed to: real food, real beer, open when almost nothing else is. Have you guys been yet? And drop your own go-to late-night spots in the comments, Nomsters, because I’m always building the list. Save this one for your next after-hours pizza craving.
