Preserve: A Must-Try Farm-to-Table Restaurant in Annapolis

December 10, 2023

Some restaurants get talked up so much you walk in half-expecting to be let down, and Preserve in Annapolis is a rare one that actually earns every bit of the buzz. It sits right on Main Street, a few blocks from the water, and it’s built its name on food, service, and interiors people won’t stop raving about.

I finally went with my mom to see what all the fuss was about, and yeah, the hype’s well-deserved. This is a farm-to-table spot that leans hard into fermentation and pickling, so you get familiar comfort dishes turned a little funky and bright in the best way. Whether you’re after a cute lunch with a friend or a lovely date-night dinner, Preserve’s the kind of place that makes you slow down and actually savor the meal. The pierogies alone are worth the trip, but that tiramisu crepe cake at the end? Save room, Nomsters, I mean it!

What Makes Preserve One Of The Best Restaurants In Annapolis

Plenty of places slap “farm-to-table” on the menu and call it a day, but Preserve actually builds the whole concept around fermentation and pickling. Chef and owner Jeremy Hoffman trained at the Culinary Institute of America and cooked at the acclaimed Restaurant Eve in Alexandria before opening here with his wife Michelle, and his Pennsylvania Dutch roots are a big part of why preserving food is the heartbeat of the kitchen.

They source locally whenever they can, which is always a win in my book, and they run a whole retail ferment line called Cabbage Alley that you can literally take home in a jar. The food world’s noticed too: Washingtonian named Preserve one of its 100 Very Best Restaurants for 2026. It’s the kind of thoughtful, ingredient-first cooking Annapolis doesn’t have a ton of.

What to Order at Preserve

Here’s a rundown of everything we got, and it was a strong lineup top to bottom.

Cheddar Pierogies

Basil-mozz pierogies tossed with Swiss chard kimchi, oyster sauce mayo, scallions, and a hit of chili flake, so you get that pillowy dumpling comfort with a tangy, funky, slightly spicy edge from the ferments. Absolutely delish, and a perfect way to kick off the meal.

Shrimp Dog

This one split the table, which I kind of loved. It’s a smoked shrimp sausage on a butter-toasted bun with creamy garlic sauce, cucumber, lettuce, and chives. The sausage was super smoky with a great snappy texture, and the garlic tied it all together perfectly. I was a big fan. My mom, though? Not so much, so consider yourself warned that the smoky seafood-sausage thing isn’t for everyone.

Pan Roasted Rockfish

If you want the fancy move, this is it. A rockfish filet plated with corn cream, fresh herbs, and curry-spiced fermented zucchini, and it was a real winner for us. The fish came out impeccably cooked, flaky and moist, while the corn cream and herbs kept everything in perfect balance. This was my mom’s favorite of the night, so clearly no hard feelings after the shrimp dog, lol.

Tiramisu Crepe Cake

Save. Room. This slice was a total showstopper, layer after layer of delicate crepe and coffee cream. I highly, highly recommend closing out your meal with dessert here, so pace yourself through the savory stuff.

The menu rotates with the seasons, so if my picks aren’t on when you go, you’re still in good hands. Other dishes that regularly turn up on Preserve’s menu include:

  • Crab salad piled on crispy hash browns
  • Crunchy kale with pepper jelly and cumin yogurt
  • Steak-frites with kimchi beef jus and chili oil
  • Roast chicken and their house-made focaccia

The Real Test: Bringing My Mom Along

Half the fun of this meal was going with my mom, because we don’t always agree and that honestly makes for a better review. She’s the reason I know the shrimp dog isn’t universally loved and that the rockfish is a knockout, and watching her light up over that fish told me everything.

Preserve just has that easy, lingering energy that’s perfect for catching up with someone you love. It reminded me of another mother-daughter afternoon we spent in Annapolis over at Reynold’s Tavern, where we did their Colonial High Tea. If you’ve got a parent, a partner, or a friend who actually cares about food, this is a great spot to bring them.

Can You Take Preserve’s Ferments Home?

Yes, and you totally should. Preserve’s whole identity is built on fermentation and pickling, and they bottle that work up under a label called Cabbage Alley. You can grab jars of their kimchi, curtido (that’s the tangy Salvadoran cabbage slaw), and sauerkraut to take home, which is such a fun way to keep the meal going on your own kitchen table.

Fermentation isn’t just a trendy buzzword here, it’s genuinely the point, from the pickled bits woven through the dishes to the ferments they’ll sell you on the way out. If you’ve ever wanted to get into fermented foods but felt a little intimidated, buying a jar from people who clearly obsess over it is the easiest on-ramp there is.

The Vibe and Experience

The space is a huge part of the draw. Preserve’s got this bright, white-washed brick interior with counter seats looking right into the open kitchen and cozy banquettes wrapped in sailing canvas, such a fitting nod to its Annapolis home by the water. In warmer months there’s outdoor seating near the historic downtown docks too. Service was warm and on point the whole time, and the room hits that sweet spot where it feels special without being stuffy. It works for a relaxed lunch with a friend or a proper date-night dinner, and it’s an easy add-on to a day of wandering downtown.

Would I Go Back to Preserve?

Without a doubt. Preserve lives up to every bit of its reputation, and it’s earned a real spot on my list of favorite Annapolis meals. It’s ideal for a date night, a special lunch, or anytime you want food that’s a little more thoughtful than the usual downtown fare, and dessert here is non-negotiable. If you’re making a whole day of it in Annapolis, pair it with a stop at the classic diner Chick & Ruth’s for a totally different, old-school vibe.

Preserve’s the kind of find that makes me want to plan a whole Annapolis day around it, and I’m so glad my mom and I finally made it happen. Have you guys dined at Preserve yet? Let me know what you order in the comments, Nomsters, and if you’ve got another Annapolis gem I need to try, drop it below. Save this one for your next trip to the water.
